My 4th of July!
My favorite summer holiday is the 4th of July, which we just celebrated this past week. It’s a wonderful time to appreciate and honor our faith, family, friends, freedoms, fireworks, food, and just have fun. How’s that for alliteration?! All these words beginning with the letter “f”, bring back many wonderful memories over the decades of observing this holiday. But this year, we made a new wonderful memory with my 4th of July pie.
Over this past weekend, we thanked God for what freedoms we still enjoy, watched the fireworks show with family and friends, but the special treat was that delicious pie. I’ve made components of this recipe before, but putting them all together made for a great dessert. It’s a super simple recipe, and even my husband gave it a 10 out of 10 for taste, which rarely happens! So, without further adieu, here is the recipe. Start with the crust so it has time to cool down.
Preheat oven to 350 degrees F.
Mix together: 6 Tbs. of salted butter (melted), 3/4 cup all purpose flour, and 1/2 cup pecans chopped. Pat crust mixture into a 9" pie pan or 9"x9" glass dish, and bake for 25-30+ minutes or till golden brown.
While the curst is baking, beat together till smooth: 1 (8 oz.) brick of softened cream cheese, 1 (14 oz.) can of sweetened condensed milk, and 3 Tbs. (or up to 1/3 cup depending on taste) of fresh lemon juice or the juice of 1 large lemon.
After crust has cooled, pour cream cheese mixture over crust. Cover and chill till firm. When ready to eat, garnish with red and blue berries, sweetened whip cream, and a drizzle of chocolate syrup! Yummmmmy!
The great thing about this recipe is that you can adapt it to other holidays as well. How about garnishing with a apple and cranberry sauce for Thanksgiving, cherry pie filling for Christmas, or a lemon curd or lemon pie filling for Easter? Or, get creative and make it your way!
